Another cute picture from my trip. I was able to connect with my entire house (that is the group of girls I lived with for a year in Seattle). It was so great to see them all and be able to see the newest addition…my friend Megan is a mom! Her baby, Abby, was such a joy to meet.

Very late…but my Seattle Trip highlights. What can I say life has been very busy since our spring break. I had a wonderful time catching up with friends and spending time with people who know me. Thanks. Love you all.

Last night we had a Thai Cooking Night at Dave’s parents house. It was fun for Dave and I to relive our travels through cooking the dishes we enjoyed this past summer in Thailand. We made thai iced tea, chicken skewers with a peanut sauce, phad thai, and sticky rice with mango. Although we will never be able to replicate the exact tastes we experienced in Thailand, we came pretty close!

Greg, Dave and I went snowshoeing a few weekends ago and were surprised by the four feet of fresh powder. While this makes for a beautiful landscape it also means that the trails are not packed down by other travelers. We blazed our own trail from marker to marker for just a mile, feeling more like four. We pressed on, determined to get to the Nordeen Shelter. After hiking in the thick snow for over three hours we arrived. A storm was beginning to pick up and we had just a few hours left before dark so we gulped down some tea and strategized a quicker way back to the car. We ended up taking the backside of the mountain, down to another parking area, and hitching a ride back to our car. We were grateful for the quick escape and the generosity of the woman who drove us a few miles up the road. What an adventure!

I made this sage butternut squash lasagna tonight. Wow… if you try it you will not regret it. We were in heaven, it tasted so delicious.

My parents got us new snowshoes for Christmas, so you can imagine how excited we were when we finally got some snow. On New Years day we took them for a trail run. We packed snacks and some yummy tea in our Stanly (which miraculously kept the tea hot for the entire day) and hiked 8 miles to the Swede Shelter, near Swampy Lake. The day was fantastic! The sky was clear, snow still dusted the treetops, and our snowshoes worked great. Thanks, mom and dad!

New Years Eve! We had a blast celebrating with family! We spent the evening sushi rolling, playing games, singing songs, taking communion, and praying together.
